Mutiple cake recipes








RECIPE: BUTTER CAKE
Ingredients:
1 3/4 cups all-purpose flour
1/2 tablespoon baking powder
1/2 teaspoon salt
3/4 cup butter, softened
1 1/4 cups sugar
2 eggs
3/4 cup milk
1 teaspoon vanilla extract

Method:

Put all ingredients into a big bowl and use an electric hand mixer to blend all ingredients until smooth. Grease and flour a 9 x 5 inch loaf pan and transfer the batter into the baking pan. Bake at 350° for 50 – 60 minutes or until golden brown and a cake tester inserted in the center comes out clean.

BLUEBERRY POUND CAKE
INGREDIENTS:

1 cup butter (softened)
2 cups sugar
4 eggs
1 teaspoon vanilla extract
3 cups flour divided
1/2 teaspoon salt
1 teaspoon baking powder
1 cups fresh or frozen blueberries

METHOD:

Preheat oven to 325 degrees. Cream butter and sugar. Add eggs one at a time and beat until light and fluffy. Add vanilla. Sift 2 cups flour, salt and baking powder together. Add sifted ingredients to creamed mixture and beat.

Dredge berries in remaining flour. Gently fold floured berries into the batter. Grease and dust the bundt pan (or tube pan) with flour; pour batter into it. Bake for 1 hour and 15 minutes, or until it’s done.


CREAM SODA CAKE

Ingredients:-
180 g butter
3 large eggs
90 g castor sugar
1 tsp vanilla or lemon essence
240 g flour
1 tsp baking power
1 cup ice cream soda

Method:-
Beat butter until light and creamy. In a separate bowl whisk eggs and castor sugar until light and fluffy. Stir in beaten butter and essence. Carefuly fold in sifted flour and baking powder alternately with ice cream soda.
Pour mixture into a 21 cm round cake tin lined with greased greaseproof paper. Bake in a moderate oven for 35 mins or until cooked when tested with a skewer.

How to make Bahulu -( Malaysian sponge cake)

1. Sieve both flour together with baking powder.
2. Whisk the eggs and sugar until thicken.
3. Add the vanilla essence.
4. Fold in 20gm of sifted flour at a time into the egg batter. Preheat oven to 250 degrees centigrade. Lightly grease the mould (to prevent the bahulu from sticking) and spoon in batter. Do not fill to the top. Bake bahulu for about five minutes in hot oven.

Alternatively, you can bake bahulu the traditional way by using charcoal fire. You have to place the hot coals on top of and under the mould.

Bahulu keeps quite well in an airtight container, but will harden with time.Its nice to eat it warm. so you can reheat in your micro-oven to get back the softness texture.

1 tbsp tapioca flour or rice flour
1/4 tsp baking powder
